Advice about Origine Boxes
Unlike ‘Filles boxes’, which are airtight and vacuum-sealed, ‘Origine boxes’ are filled to volume and under simple pressure. In these boxes, the caviar will continue to mature and slowly drain (up to 5% of the total weight).
This is the reason why we ship the tins in a vacuum-sealed bag with absorbent paper. Before serving your caviar, open the bag and clean the tin. Then simply remove the elastic band and carefully open the tin (turning it if necessary).
Store in the fridge and consume within 48 hours after opening.
It’s best to take your box of caviar out of the refrigerator about 5 minutes before serving. Place it on a bed of ice to keep it fresh throughout the tasting. Use a small mother-of-pearl spoon, which won’t break the grains or cause oxidation.

A very simple recipe
Mashed potatoes with caviar
Cook the peeled potatoes in salted wate
Drain and mash them with a potato masher, then mix in a little crème fraîche.
Place the mashed potatoes on a plate.
Top with a generous spoonful of caviar (about 50g per person).
